The reason for this is because 1.0rc1 wasn't supposed to be a widely-public build. It wasn't supposed to be posted on MacUpdate or VersionTracker, but somebody decided to submit it to one of them, anyway.
1.0b2 is the latest Officially Announced As Stable release.
1.0rc1 represents further developments of 1.0b2 and, while a release candidate for the forthcoming 1.0final, is not being promoted as a stable build for "normal" users to download and use.
However, the fact that it's a release candidate for a final 1.0 build means that it's probably (unofficially) at least as stable/good as 1.0b2, so I'd personally say to get 1.0rc1 (which is what I'm using and having no problems with) (well not serious ones anyway).
